Grilled quail with honey pomegranate reduction and sun-dried tomato bisque soup: pointers? ?
I'm making a surprise dinner for my brother tomorrow.
If you have used pomegranate juice in a sauce before, does it reduce well? The traditional honey pomegranate sauce is 1 part honey to 1 part juice. For the reduction what would you suggest? 1:2?
If I were to make a traditional tomato bisque, but wanted to add a little sun-dried flare, what would be the best way to go about this? I was thinking of getting dry (not in oil) sun-dried tomatoes and grinding them al la chipotle seasoning-esque...style. Good idea or bad idea?
I was thinking of preceding the meal with perhaps a spinach waldorf salad. If you have a better idea let me know.
I'm not exactly a microwave-using-Martha-Stewart-recipe-following type of cook. Give me your professional, creative take!
If you want to make a traditional tomato bisque, I would take two sundried tomatoes, bring them back in hot a hotwater bath, and puree them, maybe adding a little olive oil. then use this as a 'topper' to your bisque. Otherwise, heres a recipe using sundried tomatoes...:
Sun Dried Tomato Bisque
Recipe Ingredients:
1 quart Half and Half
1 small onion; peeled and stuck with 2 cloves
6 whole black peppercorns (more to taste)
1 pinch Kosher salt
4 tbsp flour
4 tbsp cold milk
3 ounces Sun Dried Tomatoes
2 cups chicken broth
chopped herbs for garnish (basil, chervil, or parsley)
***Bouqet Garni***
Tie in cheesecloth:
6 fresh parsley stems
1/2 tsp dried leaf thyme
1/2 bay leaf
Cooking Directions:
1. Place the half & half, onion, peppercorns, salt and bouquet garni in a saucepan and bring slowly to a boil. Form a smooth paste of the flour and the cold milk. Put into the just-boiling milk and stir briskly until there are no lumps. Simmer over very low heat for 20 minutes. Meanwhile, boil the sun dried tomatoes in the 2 cups of chicken broth; do not drain. Strain the half & half mixture, add the tomatoes and their liquid, and simmer another 5 minutes. In a blender, in batches, liquefy the soup. Return to the stove and bring just to a boil. Serve in hot bowls garnished with a minced green herb.

For your salad, heres a lighter one,just in case you find youre not into a heavy meal..:
Cucumber Salad Recipe
Ingredients:
1 medium cucumber -- sliced
1 medium onion -- sliced
2 teaspoons salt
2 tablespoons sugar
2 tablespoons vinegar
1 cup cold water
1/4 teaspoon pepper
Directions:
Mix all ingredients together and chill before serving
TIPS: You can add cherry tomatoes if youd like as a form of progression into your soup..I would use a vidalia or other sweet onion. You can also use quick blanched and then chilled fresh, : Spinach, carrots, zuchini, or squash. I say blanched, cos it cuts the crunchy strong taste down just a little.
